Chicken & Hummus Wraps

1  7 oz carton desired-flavor hummus OR  1  8 oz tub garden vegetable cream cheese

4  10-inch flour tortillas

1/2 cup plain low-fat yogurt or sour cream

1  6 oz package refrigerated cooked chicken breast strips

chopped tomatoes

lettuce

onion

1/2 medium cucumber, cut into 2 inch matchsticks

 

Spread hummus evenly on tortillas. Spread yogurt over hummus. Top with chicken, tomatoes, lettuce, onion and cucumber. Roll up tortillas.

In Your Sleep Chili

Prep: 15 minutes  Cook: 4 to 6 hours (low) or 2 to 3 hours (high)  Makes: 6 servings

1 lb lean ground beef

1 cup chopped onion

2 15 oz cans reduced sodium chili beans, undrained

1 14.5 oz can fire roasted diced tomatoes, undrained

1 11.5 oz can hot-style vegetable juice

Sliced green onions, sour cream, and/or shredded cheddar cheese (optional)

1. In a large skillet cook ground beef and onion over med-high heat until meat is brown, break up meat as it cooks. Drain off fat.

2. Transfer meat mixture to a 3.5 or 4 quart slow cooker. Stir in chili beans, tomatoes and vegetable juice.

3. Cover and cook on low heat setting for 4 to 6 hours or on high heat setting for 2 to 3 hours.

4. If desired, top each serving with green onions, sour cream, and/or cheese.
